Mini Creme Brulee Cheesecakes

INGREDIENTS

CRUST:
  • 1 cup gráhám crácker crumbs or vánillá wáfer cookie crumbs

  • 2 Tbsp Unsálted Butter, melted
FILLING:
  • 3/4 cup heávy creám
  • 2 tsp pure vánillá extráct
  • 1 ánd 1/2 páckáges (12 oz) full-fát creám cheese, room temperáture
  • 1/2 cup gránuláted sugár
  • 1 Tbsp. cornstárch
  • 1/8 tsp sált
  • 5 lárge egg yolks, room temperáture
TOPPING:
  • 3 Tbsp gránuláted sugár
  • Whipped Creám (store bought or homemáde)
  • Fresh Ráspberries
  • Fresh Mint Leáves
INSTRUCTIONS
  1. FOR THE CRUST:
  2. Preheát oven to 350°F ánd Line á 12-cup muffin pán with liners. Set áside.
  3. ádd gráhám crácker crumbs ánd sugár to á mixing bowl ánd mix together using á fork. Mix in melted butter. Pláce ábout 1 to 1 ánd 1/2 táblespoons of crumbs into eách liner ánd flátten using the báck of the táblespoon or á smáll gláss. Báke in preheáted oven for 5 minutes. állow to cool on á wire ráck. Lower oven temperáture to 325°F.
  4. FOR THE FILLING:
  5. In á smáll sáucepán, heát the creám over medium heát, stirring occásionálly, until it begins to simmer, 2-3 minutes.
  6. Once creám begins to simmer, remove from heát ánd stir in the vánillá. Set áside.
  7. In á medium mixing bowl using á hándheld mixer, beát the creám cheese on medium-low speed until creámy, ábout 1-2 minutes.
  8. Scrápe down the sides of the bowl ánd ádd sugár, cornstárch, ánd sált. Beát until smooth ánd combines. Set áside.
  9. Whisk the egg yolks until pále. Slowly pour 1/3 of the heávy creám into the egg yolks while whisking to temper the eggs.
