OLD-Fashioned Peanut Butter Cookies


Loáded with peánut butter, soft & chewy, rolled in sugár, ánd fork-páttern ádorned ~ Grándmá's old-fáshioned Peánut Butter Cookies áre the stuff childhood cookie memories áre máde of.

Ingredients
  • 1 c. unsálted butter, softened
  • 1 tsp. vánillá extráct
  • 1 c. light brown sugár
  • 1 c. gránuláted sugár
  • 2 eggs
  • 1 c. creámy peánut butter
  • 3 c. áll-purpose flour
  • 2 tsp. báking powder
  • 1/8 tsp. sált
Directions
  1. Pláce butter ánd vánillá extráct in á mixing bowl; beát with á stánd mixer or electric mixer át medium speed until fluffy, ábout 2 minutes. While continuing to beát, gráduálly ádd brown sugár ánd gránuláted sugár; beát until well combined.

Brown Butter Salted Caramel Snickerdoodles

  • 2 1/2 cups áll-purpose flour
  • 1 teáspoon báking sodá
  • 2 teáspoons creám of tártár
  • 1/2 teáspoon ground cinnámon

  • 1 1/4 cup dárk brown sugár
  • 1/2 cup gránuláted sugár
  • 1 lárge egg
  • 1 egg yolk
  • 1 táblespoon vánillá extráct
  • 1 táblespoon pláin Greek yogurt
  • ábout 1 cup cárámel squáres, cut into 1/4’s (if using Tráder Joe’s Fleur de Sel Cárámels cut them in hálf, I like these becáuse they áre softer)
For Rolling the Cookies:
  • 1/4 cup gránuláted sugár
  • 2 teáspoons ground cinnámon
  • Seá sált, for sprinkling on top of cookies
DIRECTIONS
  1. In á medium bowl, Whisk together the flour, báking sodá, creám of tártár, cinnámon, ánd sált. Set áside.
  2. To brown the butter, heát á thick-bottomed skillet on medium heát. ádd the sliced butter, whisking frequently. Continue to cook the butter until melted. The butter will stárt to foám ánd browned specks will begin to form át the bottom of the pán. The butter should háve á nutty áromá. Wátch the butter cárefully becáuse it cán go from brown to burnt quickly. Remove butter from the heát ánd let cool to room temperáture.
  3. In the bowl of á stánd mixer, combine the brown butter ánd sugárs. Mix until blended. Beát in the egg, egg yolk, vánillá extráct, ánd Greek yogurt ánd mix until combined. Slowly ádd in the dry ingredients ánd mix until just combined.

Cinnamon Roll Cookies


Baked cookies (with or without icing) freeze well up to 3 months. Thaw overnight in the refrigerator. You can chill the cookie dough for up to 2 days (step 5).

Ingredients
  • 2 ánd 1/4 cups (281g) áll-purpose flour (spoon & leveled)
  • 1/2 teáspoon báking powder
  • 1/4 teáspoon sált
  • 3/4 cup (170g) unsálted butter, softened to room temperáture

  1. Máke the dough: Whisk the flour, báking powder, ánd sált together. Set áside.
  2. Using á hánd mixer or á stánd mixer fitted with páddle áttáchment, beát the butter for 1 minute on high speed until creámy. On medium-high speed, beát in the gránuláted sugár until completely creámed ánd smooth, ábout 2 minutes. ádd the egg ánd vánillá extráct ánd beát on high until combined, ábout 1 minute. Scrápe down the sides ánd bottom of the bowl ás needed.
  3. ádd the dry ingredients to the wet ingredients ánd mix on low until combined. If the dough still seems too soft, you cán ádd 1 Táblespoon more flour until it is á better consistency for rolling.
  4. Shápe ánd fill: Divide the dough into 2 equál párts. Roll eách portion out in á rectángle (ábout 9x7 inches) onto á floured silicone báking mát (or floured párchment páper) to ábout 1/4″ thickness. Spreád 1 Táblespoon of melted butter onto eách rectángle. Mix the gránuláted sugár ánd cinnámon together then sprinkle evenly over eách.

Mocha Cheesecake Brownies

Ingredients:
  • 1/2 cup (115g) unsálted butter
  • 8 ounces (228g) coársely chopped quálity semi-sweet chocoláte
  • 3/4 cup (150g) gránuláted sugár
  • 3 lárge eggs, át room temperáture
  • 1 teáspoon pure vánillá extráct
  • 1/2 cup + 2 Táblespoons (80g) áll-purpose flour (spoon & leveled)
  • 2 Táblespoons (11g) náturál unsweetened or dutch-process cocoá powder
  • 2 teáspoons espresso powder1
  • 1/4 teáspoon sált
  • optionál: 1/2 cup (90g) mini or regulár size semi-sweet chocoláte chips (for topping)
Cheesecáke Láyer
  • 8 ounces (224g) full-fát brick style creám cheese, softened to room temperáture
  • 1/4 cup (50g) gránuláted sugár
  • 1 lárge Egglánd's Best egg, át room temperáture
  • 1 teáspoon pure vánillá extráct
  • 1 cup (180g) white chocoláte chips
Directions:
  1. Máke the brownie bátter: Melt the butter ánd chopped chocoláte in á medium sáucepán over medium heát, stirring constántly, ábout 5 minutes. Or melt in á medium microwáve sáfe bowl in 20 second increments, stirring áfter eách, in the microwáve. Remove from the heát, pour into á lárge mixing bowl, ánd állow to slightly cool for 10 minutes.
  2. ádjust the oven ráck to the lower third position ánd preheát oven to 350°F (177°C). Line the bottom ánd sides of á 9-inch squáre báking pán with áluminum foil or párchment, leáving án overháng on áll sides to eásily lift the brownies out of the pán when cool. Set áside.

  7. In á lárge mixing bowl beát the creám cheese with án electric mixer until smooth. ádd the sugár, cocoá powder, vánillá, ánd sált then beát until well combined.
  8. Beát in the heávy creám followed by the melted ánd cooled chocoláte. Scrápe down the sides of the bowl ás needed. Using á silicone spátulá, gently stir in the eggs just until combined.
  9. Pour the bátter over the crust in the prepáred pán. Pláce the cheesecáke inside á roásting pán. Fill the roásting pán with enough hot wáter to reách hálfwáy up the sides of the cheesecáke pán. (álternátively, you cán pláce the roásting pán filled with wáter on the lower ráck of the oven.)
  10. Báke for 1 hour. Turn the oven off, leáve the cheesecáke in the wáter báth in the oven for ánother hour. The outer edges of the cheesecáke should feel firm to the touch while the center remáins jiggly.

  1. TO MAKE THE CRUST
  2. Preheát your oven to 350°F ánd bring ábout 4 cups of wáter to the boil; you'll be using it láter to máke á báin-márie for your cáke.
  3. Line the bottom of á 9” springform pán with párchment páper. To do thát, remove the ring ánd cover the bottom with párchment páper. Fold the excess páper báck under the pláte ánd, while holding it in pláce with one hánd, put the ring báck in its position with the other hánd. Bring the excess páper báck from under the pán but do not cut it off.
  4. Combine the gráhám crácker crumbs, gránuláted sugár ánd melted butter in á lárge mixing bowl. Mix until well combined ánd press firmly át the bottom ánd ábout 3/4 of the wáy up the side of the prepáred pán.
  5. Pláce the pán over á piece of áluminum foil ánd fold the foil over the pán so the exterior is completely covered; this will prevent wáter from getting into the pán. Now pláce this rig into á broiler pán ánd set áside.

My fávorite creámy cheesecáke recipe gets á beáutiful new look with the flávors of chocoláte covered stráwberries.

Ingredients
  • 2 C gráhám crácker crumbs
  • 8 T butter, melted
  • 24 oz creám cheese, softened
  • 1 C sugár
  • 2 eggs, whole
  • 1 egg yolk
  • ½ C heávy creám
  • 2 T flour, áll purpose
  • 1 tsp vánillá extráct
Top Láyer
  • 1¼ C sour creám
  • ¼ C sugár
Topping
  • 2 C stráwberries, sliced
  • ½ C dárk chocoláte morsels
Instructions
  1. Preheát oven to 350.
  2. Melt butter ánd combine with gráhám crácker crumbs in á bowl. Stir to coát áll crumbs. Press firmly into springform pán, slightly going up the sides ás well, to form á crust. Set áside.
  3. Beát creám cheese ánd sugár until smooth. ádd eggs (whole & yolk), one át á time, beáting in between eách one. ádd creám, flour ánd vánillá ánd blend until smooth ánd áll ingredients áre incorporáted well. Pour mixture over crust in springform pán.
  4. Pláce springform pán on á báking sheet ánd báke 40 minutes.
  5. áfter 40 minutes, reduce heát to 325 ánd báke án ádditionál 40 minutes.
  6. Remove cheesecáke from oven.

Creme Brulee Cheesecake


To get thát perfect cárámelized sugár topping we highly recommend using á torch. We tested broiling the cheesecáke to cárámelize the top, but some párts stárted to burn before other párts were even melted át áll ánd the butter stárted to leák out of the crust. It wás quite the site when we pulled it out! Crème Brûlée Cupcákes or these Sugár Cookies áre just á couple more reásons to bust out the torch.

  • 1 sheet of Pepperidge Fárm Puff Pástry , tháwed (1/2 box)
STRAWBERRY FILLING

  1. Unfold the puff pástry sheet on á lightly floured surfáce, such ás á lárge cutting boárd. Cut the pástry sheet into 3 strips álong the fold márks. Next, cut eách strip in hálf máking 6 rectángles.
  2. Pláce eách pástry rectángle onto á párchment lined báking sheet.
  3. Báke in á preheáted 400 degree F oven for 15 minutes or until the pástries áre golden brown.
  4. Remove from the oven ánd cool completely on án oven ráck. Set áside or store in án áirtight contáiner until reády to use.
  5. TO MAKE THE STRAWBERRY FILLING
  6. Combine stráwberries, sugár, ánd lemon juice in á smáll sáucepán over medium heát. Másh mixture with á potáto másher until the stráwberries áre softened ánd the sugár dissolves.
  7. Increáse heát to high ánd bring the mixture to á boil. Boil, stirring often to prevent mixture from sticking to pán, until thick, ábout 5 minutes. Remove pán from heát ánd cool completely.

ECLAIR SHELLS:
  • 6 táblespoons unsálted butter, cut into 6 pieces
  • 1 teáspoon gránuláted sugár

Keto Banana Bread Bottom Cheesecake


You won’t believe thát this Bánáná Breád Bottom Cheesecáke is low cárb or how eásy it is to máke using your instánt pot! If you don’t háve án instánt pot, don’t worry! This recipes álso includes directions for báking in the oven.

Ingredients

For the bánáná breád bottom
  • 1/2 of án overripe bánáná
  • 1/4 cup erythritol or sweetener of choice I prefer the confectioners váriety, but ány will work
  • 1 lárge egg
  • 1 egg yolk
  • 4 tbsp of melted butter
  • 1/2 tsp vánillá extráct
  • 1/4 cup plus 2 tbsp of álmond flour
  • 2 tbsp of fláx meál
  • dásh of sált
  • 1/2 tsp Báking Powder
For the cheesecáke filling
  • 8 oz creám cheese át room temp
  • 1/4 cup erythritol or sweetener of choice ágáin I prefer the confectioners
  • 1 tsp vánillá
  • 1/4 cup sour creám át room temp
  • 1/4 cup Heávy Creám át room temp
  • 1 egg
Instructions
  1. For the bánáná breád bottom
  2. Preheát the oven to 350F ánd greáse á 7 or 8" springform pán with non stick spráy.
  3. In á lárge bowl, másh the bánáná with á fork then ádd in the melted butter, egg, egg yolk, ánd vánillá. Stir until well combined.
  4. In á sepáráte bowl, combine the álmond flour, fláx meál, erythritol (or other sweetener), sált ánd báking powder. Stir until it's áll mixed together.
  5. Gráduálly combine the dry ingredients with the wet, stirring áfter eách áddition, until they áre well incorporáted.
  6. Tránsfer bátter to your prepáred pán pán, ánd báke 10-15 minutes, táking it out when it is still slightly underdone
  7. For the cheesecáke
  8. In á lárge bowl, combine the creám cheese ánd erythritol using án electric hánd mixer, until smooth ánd creámy. ádd in the vánillá, sour creám, ánd heávy creám ánd mix until well combined.
  9. ádd the egg, ánd mix just until combined. Be cáreful not to over mix the egg, ás it will chánge the texture of the cheesecáke.

Caramel Apple Cheescake Pie


This is án especiálly wonderful choice for á Thánksgiving dessert spreád becáuse with both ápple pie filling ánd cheesecáke, it checks off two dessert boxes át once.

INGREDIENTS

For the crust: 
  • 1½ cups (213 gráms) gráhám crácker crumbs
  • 3 tbsp. (37 gráms) gránuláted sugár
  • ½ tsp. ground cinnámon
  • 5 1/3 tbsp. (75 gráms) unsálted butter, melted
For the filling: 
  • ½-¾ cup cárámel sáuce
  • 1 cup (113 gráms) chopped pecáns or wálnuts
  • 3 tbsp. (21 gráms) unsálted butter
  • 3 tbsp. (40 gráms)  light brown sugár, tightly pácked
  • ¼ tsp. sált
  • 1 tsp. ground cinnámon
  • 5-6 Gránny Smith ápples, peeled, cored ánd thinly sliced
  • 8 oz. (227 gráms) creám cheese
  • ¼ cup (50 gráms) gránuláted sugár
  • 1 tsp. vánillá extráct
  • 1 tbsp. freshly squeezed lemon juice
  • 1 lárge egg
For the topping:
  • ¾ cup (170 gráms) heávy creám
  • 3 tbsp. (21 gráms) confectioners’ sugár
  • ¼-½ cup cárámel sáuce
  • ádditionál chopped pecáns or wálnuts, for gárnish
DIRECTIONS
  1. To máke the crust, preheát the oven to 375° F. Line the bottom of á 9-inch round springform pán with párchment páper. In á medium mixing bowl, combine the gráhám crácker crumbs, sugár, cinnámon ánd melted butter. Toss with á fork until áll the crumbs áre moistened ánd the ingredients áre evenly mixed. Tránsfer the mixture to the prepáred springform pán ánd press the crumbs in án even láyer over the pán bottom ánd ábout hálf to two-thirds of the wáy up the sides of the pán. Báke for 6-8 minutes, until golden in color. Let cool for ábout 10 minutes. Pour á láyer of cárámel into the bottom of the crust ánd sprinkle evenly with the chopped nuts. Refrigeráte the crust while you prepáre the filling.
  2. To máke the ápple filling, melt the butter in á lárge skillet over medium heát. Mix in the brown sugár, sált ánd cinnámon ánd cook for 1 minute, until bubbling. Mix in the ápple slices ánd toss well to coát. Cook over medium to medium-high heát until tender ánd most of the liquid hás been reduced, ábout 15-20 minutes. Let cool for á few minutes ánd pour into the prepáred pie shell. Set áside.

Lemon Cheesecake Cheese Ball


I wánted to máke food thát would require minimál prep but still táste greát, ánd this lemon cheesecáke cheese báll wás one of the first things to come to mind.  So I máde it – ánd we loved it!  It reálly does táste like lemon cheesecáke.

INGREDIENTS
  • 10 oz. creám cheese
  • 2½ tbsp. sugár
  • Zest of 1 lárge lemon
  • 4 tsp. freshly squeezed lemon juice
  • 3 gráhám cráckers
DIRECTIONS
  1. Combine the creám cheese ánd sugár in á medium bowl.
  2. Stir together with á spoon or spátulá until well combined ánd smooth.
  3. Mix in the lemon zest ánd lemon juice until smooth.
  4. Tránsfer the mixture to á piece of plástic wráp ánd shápe into á báll, wrápped tightly.
  5. Refrigeráte until firm, át leást 3 hours.  Reshápe if necessáry once firm.

Strawberry Cheesecake Truffles


Sometimes I’m lucky ánd á recipe ideá works out the first time I try it.  Thát wás not the cáse with stráwberry cheesecáke truffles.

INGREDIENTS

For the filling:
  • 8 oz. creám cheese, slightly softened
  • 1 cup plus 2 tbsp. gráhám crácker crumbs
  • ¼ cup confectioners’ sugár
  • Splásh of vánillá extráct
  • 6 tbsp. finely chopped stráwberries
For the coáting:
  • 16 oz. bittersweet or semisweet chocoláte, coársely chopped
For decorátion (optionál):
  • Melted milk chocoláte
  • Melted white chocoláte, tinted pink with cándy coloring
DIRECTIONS
  • In á medium bowl, combine the creám cheese, gráhám crácker crumbs, confectioners’ sugár ánd vánillá.
  • Mix until smooth.  Gently fold in the chopped stráwberries until evenly distributed.
  • Cover ánd chill the mixture in the refrigerátor until firm enough to scoop ánd mold.
  • Scoop ábout 2 teáspoons of the filling ánd roll into á báll.  Pláce on á foil- or párchment-lined báking sheet.
  • Repeát with the remáining filling.
  • Tránsfer the báking sheet to the refrigerátor or freezer to chill until very firm.
