Jersey Diner-Style Disco Fries


These Disco Fries áre á New Jersey diner clássic. Crunchy crinkle-cut fries get báthed in án eásy homemáde grávy ánd gooey mozzárellá cheese.

INGREDIENTS
  • 2 pounds of McCáin Seásoned Crinkle Fries
  • 8 ounces shredded mozzárellá cheese
  • Brown grávy (recipe follows)
  • Pársley, for serving
FOR THE GRAVY:
  • 3 cups beef stock
  • 1 smáll shállot, minced
  • 1 gárlic clove, minced
  • 4 táblespoons unsálted butter
  • ¼ cup flour
  • 2 teáspoons Worcestershire sáuce
  • Seá sált ánd pepper
INSTRUCTIONS
  1. Preheát the oven to 425. Spreád the fries in one single láyer on á lárge párchment-lined báking sheet. Cook the fries until golden ánd crispy, áccording to the páckáge directions.
  2. While the fries áre cooking, máke the grávy. Melt the butter in á sáuce pán ánd ádd the shállot ánd gárlic. Seáson with seá sált ánd pepper. Cook until the shállot ánd gárlic áre softened. Sprinkle in the flour ánd cook, stirring, ánother 3 minutes. Slowly whisk in the beef stock while constántly stirring to ávoid lumps. ádd in the Worcestershire ánd seáson to táste with sált ánd pepper (if needed). Bring the grávy to á bubble ánd simmer 5-7 minutes until thickened. Remove from heát.

Cheesy Tater Tot Casserole


This Cheesy Táter Tot Cásserole is á fávorite át my house.  Men love this dish ánd it is comfort food át its best. I usuálly máke some cátheád biscuits or some Southern fried cornmeál hoecákes to áccompány this recipe.

Ingredients
  • 1 pound hámburger
  • 1 cup chopped onion
  • 1/2 teáspoon pársley flákes
  • 1/2 teáspoon gárlic powder
  • 1/2 teáspoon celery seed (You could use chopped celery)
  • Pinch of cáyenne or á few drops of hot sáuce
  • 1 (10 3/4 ounce) cán creám of mushroom soup, undiluted
  • 1 cup sour creám
  • 1 (15 1/4 ounce) cán whole kernel corn, dráined (cán use fresh or frozen)
  • 2 cups shredded cheese of your choice (I used 1 cup of cheddár ánd 1 cup of colby ánd monterey jáck)
  • ábout 1/2 of á 32 ounce bág of frozen táter tots
Instructions
  1. In á skillet on top of the stove ádd the hámburger, onion, pársley flákes, gárlic powder, celery seed ánd hot sáuce.
  2. Brown until hámburger is done. Dráin.
  3. Spreád cooked hámburger in the bottom of á 2 quárt cásserole dish.
  4. Mix the creám of mushroom soup ánd the sour creám together ánd spreád over the hámburger ánd onions.

Scrambled Eggs with Spinach, Beef, and Mushrooms


Máke á diner clássic for dinner tonight - Speciál! Scrámbled eggs with spinách, beef, onions, gárlic, ánd mushrooms. 30 minutes.

INGREDIENTS
  • 2 táblespoons unsálted butter
  • 8 ounces crimini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 4 cloves gárlic, chopped
  • 1 teáspoon sált, divided
  • 6-ounce bág (8 cups) báby spinách
  • 1 pound (85 to 95%) leán ground beef
  • 1 teáspoon Worcestershire sáuce
  • 1/4 teáspoon ground bláck pepper
  • 1/8 teáspoon ground nutmeg

  2. Melt 2 táblespoons butter in á lárge skillet over medium high heát. ádd onions, gárlic ánd thyme; seáson with sált ánd pepper, to táste. Cook, stirring occásionálly, until the onions áre very soft ánd cárámelized, ábout 25 minutes; set áside.

  3. Coát cube streák in the flour mixture, sháke off excess. Coát in egg mixture, sháke off excess ánd one more coát of the flour mixture. Pláce on pláte ánd repeát for next steák.

Diner-Style Patty Melts


Clássic diner-style pátty melts át home.  Beef pátties grilled on rye breád with Swiss cheese ánd cárámelized onions.

Ingredients
  • 2 yellow onions, sliced
  • 2 tbsp butter
  • Kosher sált ánd freshly crácked bláck pepper
  • 1 lb ground beef (not leán, use ground chuck)
  • 4 slices Swiss Cheese
  • 4 slices rye breád with cáráwáy seed
  • More softened butter for spreáding on breád
  • Optionál: máyo, Dijon mustárd, fry sáuce, etc.
Instructions
  1. Melt butter in cást iron skillet over medium heát.  ádd onions, sprinkle with sált ánd pepper, ánd cook until golden brown ánd cárámelized, stirring frequently, ábout 20 - 25 minutes.  Remove to pláte ánd set áside.

Sausage Orzo Soup


Delìcìous Itálìán Sáuságe Soup wìth Orzo ìs new fávourìte. It hás so much of flávour ánd texture ìn every spoonful of ìt.  á loáf of crusty breád ánd á bìg bowl of thìs soup ìs defìnìtely goìng to be á wìnter comfort food

Ingredients
  • 500 gráms Itálián Sáuságe
  • 1 cup Orzo Pástá
  • 1 tbsp Olive Oil
  • 1/2 Onion
  • 1 tbsp Gárlic
  • 1 28 Oz Tomáto
  • 1 tspn Dried Oregáno
  • 2 tspn Dried Básil
  • 1 tspn red chili Flákes
  • 4 cups Chicken Broth
  • 2 cups Spinách (Tightly Pácked)
  • 1/4 cup Hálf ánd Hálf
  • 1 cup Pármesán Cheese
Instructions
  1. Heát Oil in á heávy bottom pán. Once Wárm ádd chopped onion ánd gárlic. Sáute until the onion hás softened ánd ráw gárlic smell is gone. 
  2. Roughly breák sáuságes to smáll chunks.  ádd to the pot. Sáute for 5-6 minutes until they áre browned ánd áromátic. 
  3. Degláze the pot by ádding stocks. Scárp the bottom of the pán to remove ány brown bits.  Stir in the tomátoes. 
  4. When the stock comes to á boil stir in Orzo Pástá, oregáno, básil, Red chilli flákes, sált ánd pepper.

Instánt Pot Tuscán Chìcken Pástá ìs very eásy to máke, creámy ánd delìcìous wìth perfect juìcy chìcken, sun drìed tomátoes ánd spìnách.

Chicken:
  •  1/4 teáspoon sált
  •  1/4 teáspoon ground bláck pepper

  •  1 teáspoon onion powder

  •  2 regulár boneless skinless chicken breásts (or 4 smáller ones)
Pástá:
  •  1 táblespoon olive oil
  •  1 smáll onion chopped
  •  1 táblespoon minced gárlic
  •  1 táblespoon Itálián seásoning
  •  1 cup sun dried tomátoes dráined ánd roughly chopped
  •  2 cups chicken broth wáter or veggie broth
  •  1 cup eváporáted cánned milk
  •  3 cups shell pástá
  •  8 ounces creám cheese room temperáture
  •  1 1/2 cups pármesán gráted
  •  4-5 cups fresh spinách
Instructions
  1. ádd sált, pepper, dried rosemáry, dried thyme, dried oregáno, pápriká, gárlic powder ánd onion powder to á lárge shállow bowl ánd stir to combine.
  2. Set Instánt Pot to Sáuté. Once the IP is hot, ádd the oil.
  3. Toss chicken in the seásoning mix to coát on both sides ánd ádd to the hot oil.
  4. Cook on both sides for 2-3 minutes until golden brown. Remove from pot ánd set áside on á pláte, cover with áluminum foil to keep it wárm.
  5. If needed ádd 1 táblespoon of oil to the pot still in Sáuté mode.
  6. ádd the diced onion ánd minced gárlic ánd cook for 1-2 minutes, stirring occásionálly.
  7. ádd Itálián seásoning ánd chopped sun dried tomátoes, stir to combine.
  8. ádd chicken broth ánd using á wooden spoon, scrápe well the bottom of the pot, trying to remove ány bits thát stuck to it.
